Raw honey is one of nature's great preserving mediums. It draws flavor from whatever you put in it, and it keeps almost indefinitely. When you add fresh ginger, turmeric, and galangal from our Granville County farm, the result is a honey that is golden, complex, warming, and genuinely unlike anything you can buy.

We make this every fall when all three rhizomes are freshly harvested. A jar of it makes a beautiful gift, and it earns its place in the kitchen as a sweetener, a spread, a glaze, and a spoonful taken straight.

What You Will Need

| Fresh galangal | 1-inch piece, thinly sliced | |
| Raw honey | 1 cup | Local raw honey preferred |
| Black peppercorns | 4–5 whole | Helps with turmeric absorption |
| Cinnamon stick (optional) | 1 small | Adds warmth |

Instructions

Step 1 — Prepare the rhizomes. Scrub all three roots and slice them as thin as possible. No need to peel. The thinner the slices, the faster and more complete the infusion.

Step 2 — Layer into a jar. Place all sliced rhizomes, peppercorns, and cinnamon (if using) into a clean glass jar. Pour honey over everything, making sure all the roots are submerged.

Step 3 — Infuse. Seal the jar and leave at room temperature for 7–10 days. Turn the jar upside down and back once a day to redistribute the honey. The honey will gradually turn a rich golden-amber color.

Step 4 — Strain or leave whole. After infusing, strain out the rhizome pieces for a smooth honey, or leave them in — they are edible and delicious. Store at room temperature for up to 6 months.

How to Use Rhizome-Infused Honey

Stir into hot tea, golden milk, or warm lemon water. Drizzle over yogurt, oatmeal, or fresh fruit. Use as a glaze for roasted vegetables, chicken, or salmon. Spread on toast with butter or ricotta. Mix into vinaigrette with apple cider vinegar. Take a spoonful straight as a daily wellness ritual.

Ginger, turmeric, and galangal are all grown without chemicals on our 40 acres in Oxford, North Carolina. We have been farming in Granville County since 1987. Find fresh rhizomes and well-rooted starts at our table at the Carrboro Farmers' Market every Saturday from 7 AM to 12 PM.
