Instructions
Step 1 — Preheat and prep. Preheat oven to 400°F. Peel and trim the carrots. If large, halve them lengthwise so they cook evenly.
Step 2 — Make the glaze. Melt butter in a small saucepan over medium heat. Add grated ginger and cook for 1 minute until fragrant. Add honey, olive oil, salt, and pepper. Stir to combine and remove from heat.
